There is nothing in the show to conclusively demonstrate that changelings *can't* be assimilated. Lacking evidence either way, they chose simplicity and consistency of gameplay.
The game is not the show. It's based on the show, but can't be like it in every detail. It would make for bad (and boring) gameplay.
